Three of the Cavalieri's pools are outdoors, with Rome as a backdrop. The main outdoor pool is integrated into the hotel terraces and is served by the casual pool bar. Two further pools lie deeper into the hotel's Mediterrean park. One is designed for children where parents have the luxury of sitting in the whirlpool while keeping on eye on their charges. The other basks in the sunshine until late afternoon, nestled between palm and olive trees. For those winter afternoons the fourth pool is indoors beneath a beautiful glass dome. DINING

L'Uliveto Restaurant

On the garden level of the hotel, L'Uliveto overlooks the landscaped park adjacent to the outdoor pool. Featuring Mediterranean and international dishes, its menu leans naturally towards Italian cuisine. Informal and welcoming, L'Uliveto sets high culinary standards and regularly highlights regional specialties, from Puglia to Piemonte. In summer tables are laid outside on the terrace.

Opening times for Breakfast:

Weekdays – 7.00 am to 10.30 am
Weekends – 7:00 am to 11:00 am
Opening times for lunch and dinner: From 12 noon, with last orders at 11:15 pm

La Pergola

The best hotel restaurant in Italy, La Pergola is much more than just a famous menu. Its three- Michelin stars -- the only restaurant in Rome to be accorded such an honor -- attest to the excellence of its cuisine. A wine cellar with over 50,000 bottles, a water menu with 29 choices, olive oils and vintage balsamic vinegars from the best producers in Italy, and the finest ingredients to be sourced in the Mediterranean -- all hint at the pursuit of culinary excellence. But like everything at the Rome Cavalieri, it is also about ambiance, about style. Your table is laid with vermeil plates and cutlery. All around are some of the hotel’s most charming art treasures – fine paintings, a rare Aubusson tapestry, Sèvres porcelain, 18th century bronze candelabra, precious imperial furniture and a wonderful collection of hand-blown glass by Emile Gallé.

At the center of the room is an imposing 17th century Celadron vase adorned each day with a spectacular floral composition created by the hotel’s master florist. Adjoining La Pergola is our exclusive Cigar Lounge where you can savor a great cigar with a vintage liqueur while enjoying our fine collection of orientalist paintings. But nothing influences the character of an evening at La Pergola so much as Rome itself. Beyond the panoramic windows the Eternal City is spread beneath you. On summer evenings, out on the candlelit terrace, the city twinkles like fallen constellations. The dome of St Peter’s seems close enough to touch. In such a setting, with such a menu, La Pergola is one of the world’s greatest dining experiences.

  • Opening Times: Tuesday to Saturday: 7.30 pm – 11.30 pm

Combining Rome’s sense of history and traditions with Waldorf Astoria’s signature style and service, the newly enhanced Petronius Suite at Rome Cavalieri provides an unforgettable experience that reflects its namesake, the arbiter of elegance and fine taste. Located on Rome Cavalieri’s top floor, commanding spectacular views of the city below, the Petronius Suite’s ornate bedroom, marble bathroom, kitchen, wine cellar, dining room for up to 8 guests and living space are adorned with antique furniture, precious brass, wooden parquet and rare seventeenth century paintings depicting Santa Caterina and Santa Cecilia. From mosaic tables to a sofa designed by fashion designer Karl Lagerfeld, this is a suite that doubles as an exhibition and museum in its own right.

Classic meets contemporary with the Petronius Suite’s subtle yet slick technology system, allowing guests to control audio, visual and lighting at the touch of a button and Rome Cavalieri to provide modern luxuries without losing its long-standing traditions and charm. This extends to the state-of-the-art Valcucine kitchen from the ‘Artematica’ line, fully equipped to cater for a decadent private dinner and allowing guests to treat the Suite as a luxurious home from home.

Rome Cavalieri has paid attention to the demand for space, privacy and flexibility from high-net-worth travellers and the Petronius Suite is therefore adaptable to comprise three additional Imperial Rooms with an adjacent Vista Suite, creating a unique apartment concept with the benefit of access to the resort’s extraordinary facilities.

These include Rome Cavalieri’s Imperial Club, which has also benefitted from recent enhancements, and offers a selection of drinks and light bites best enjoyed with views from the terrace, from morning through to night. Guests are also able to discover 15 acres of manicured parkland, Europe’s largest private art collection adorning the walls, indoor and outdoor swimming pools, the Cavalieri Grand Spa Club with treatments by La Prairie and Rome’s only three Michelin starred restaurant La Pergola. Whilst unforgettable experiences include gladiator training for children, taking a super-car for a spin on the winding roads of the ‘Gran Turismo’ or pampering a Very Important Pet with a choice of nutritious meals, spa grooming and dog sitting.

In addition to the re-launch of the Petronius Suite, enhancements to the Corner and Vista Suites has also reached completion, providing a Suite to suit all tastes at Rome Cavalieri.
